- FOR THE CAKE:↵
- 2 1/2 cups all-purpose flour↵
- 2 teaspoons baking powder↵
- 1 1/2 teaspoons baking soda↵
- 1 teaspoon salt↵
- 2 teaspoons ground cinnamon↵
- 1/2 teaspoon ground nutmeg↵
- 1 1/2 cups vegetable oil↵
- 1 cup granulated sugar↵
- 1 cup light brown sugar↵
- 4 large eggs↵
- 2 teaspoons vanilla extract↵
- 3 cups finely grated carrots↵
- 1 cup chopped walnuts↵
- 1 cup crushed pineapple, drained↵
- FOR THE FROSTING:↵
- 16 ounces cream cheese, softened↵
- 1 cup unsalted butter, softened↵
- 4 cups powdered sugar↵
- 2 teaspoons vanilla extract↵
- 1/4 teaspoon salt↵

DIRECTIONS↵
1. Preheat oven to 350°F.↵
2. Grease and line three 8-inch round cake pans with parchment paper.↵
3. In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.↵
4. In a large bowl, whisk the oil, granulated sugar, and brown sugar until smooth.↵
5. Add the eggs one at a time, whisking after each.↵
6. Stir in the vanilla extract.↵
7. Gently fold in the dry ingredients until just combined.↵
8. Fold in the carrots, walnuts, and pineapple.↵
9. Divide the batter evenly among the three pans.↵
10. Bake for 30-35 minutes until a toothpick comes out clean.↵
11. Cool in the pans for 15 minutes.↵
12. Turn out and cool completely on a wire rack.↵
13. For the frosting, beat cream cheese and butter until smooth.↵
14. Gradually add the powdered sugar, beating on low.↵
15. Add the vanilla and salt.↵
16. Beat on high for 2 minutes until light and fluffy.↵
17. Place one cake layer on a serving plate.↵
18. Spread 1 cup of frosting on top.↵
19. Repeat with the second layer.↵
20. Top with the third layer and frost the top and sides of the cake.↵
21. Refrigerate for 30 minutes to set before slicing.↵
